With the onset of the COVID-19 pandemic and the introduction of the quarantine regime in many countries, changing trends in consumer habits have been observed, for example, in the USA, Spain, Germany and Italy, the demand for vitamin C-enriched drinks has increased by 2-5 times. Scientists of the Lithuanian Center for Agrarian and Forest Sciences (LAMMC), together with the beverage company UAB Functional Drinks and Dutch partners, are implementing a new Eureka project, during which an innovative, functional, fermented probiotic drink would be created, with birch sap chosen as its enzymatic base.
